Amaranth / Quinoa
Amaranth is not a grain and is rich in protein. It has a high content of mold, phosphorus, magnesium and iron. Suitable for both
coeliacs and children in the weaning period, and used as a valuable ingredient for convalescents and the elderly.
Quinoa and an annual herbaceous plant of the same family as spinach and beet. It contains fiber and minerals has also mostly unsaturated fats, particularly suitable for coeliacs. The Incas called quinoa the "mother of all seeds"
